Vegetarian Taco with Cauliflower Rice

  • 8 leaves chard , stemless
  • 2 cups Eva® cauliflower bits
  • 1 sweet potato, cooked and peeled
  • 2 tablespoons margarine
  • 1/2 teaspoons salt
  • 1/4 teaspoons nutmeg
  • 1/8 red onions, cut in a plume
  • 2 avocados, sliced
  • 1/2 cups mayonnaise, for the dressing
  • 1 tablespoon sesame oil, for the dressing
  • 3 tablespoons Sriracha sauce, for the dressing
  • 1/4 teaspoons salt , for the dressing

  • Heat the water in a pot until it boils. Add the salt and cook the chard leaves for one minute. Remove and place in a bowl with cold water. Drain.
  • In the same pot, cook the Eva® Cauliflower Bits for 5 minutes. Place in cold water and drain. Set aside.
  • For the puree, process the sweet potato in a food processor with the margarine. Season with salt and a little nutmeg.
  • Assemble the tacos by placing some puree in the chard leaves, add Eva® Cauliflower Bits, red onion, and avocado. Close the tacos.
  • For the dressing, mix the mayonnaise with the oil, sriracha, and a little salt. Serve the tacos with the dressing.
