Vegetarian Tlayudas

Tlayudas are a true delicacy, as they combine the crunchy texture with beans, a touch of cheese, sauce, and nopalito salad. In the case of this vegetarian tlayuda, the pickled Nopalitos Herdez® will save you a lot of time in the kitchen, as this dish will be ready in no time.

  • 1 cup black beans, cooked
  • 1/4 cups bean cooking water
  • 2 leaves epazote
  • 2 tablespoons onion, finely chopped, for the beans
  • 2 tablespoons vegetable oil
  • 1/2 cups onion, in small cubes
  • 1 cup tomato, in medium cubes
  • 1/4 cups serrano chile, in thin slices
  • 2 tablespoons cilantro, finely chopped
  • 2 cups Herdez® pickled nopales, presentation of 425 g
  • salt
  • 2 tablespoons apple cider vinegar
  • 2 tlayuda
  • 1 cup quesillo, or Oaxaca cheese
  • 1 cup avocado
  • red salsa, to accompany

  • Blend the beans, the cooking water from the beans, the epazote, and the onion for 5 minutes or until you get a mixture that is not too thick, as this will be the base of your tlayuda. Set aside.
  • Heat the vegetable oil in a pot, add the beans, and cook for 10 minutes. Set aside.
  • Mix the onion, tomato, serrano chili, cilantro, pickled Nopalitos Herdez®, salt, and apple cider vinegar in a bowl. Mix very well until fully integrated.
  • Heat the tlayuda on a griddle over medium heat and grill for a bit. Then, add two to three tablespoons of beans, spreading them over the entire base of the tlayuda, then add the cheese and remove from the griddle when melted.
  • Serve the vegetarian tlayuda on a flat plate, add the pickled Nopalitos Herdez® salad, avocado, and red sauce. Enjoy!
