  • 2 tablespoons vegetable oil
  • 2 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups button mushrooms, fileted
  • 1 eggplant, diced
  • 1/2 cups corn kernels
  • 1 cup zucchini, diced
  • 1 tablespoon epazote, finely chopped
  • 280 grams Libanius® chipotle and coriander hummus
  • 2 tablespoons chipotle chile
  • 1 package Señor Cactus® nopal tostada shell with chia
  • 1 teaspoon onion powder
  • salt and pepper

  • In a skillet over medium heat, heat the oil and add the onion, garlic, mushrooms, eggplant, corn kernels, zucchini, and let cook for 3 minutes.
  • Add the epazote and cook for 3 more minutes.
  • Spread a Señor Cactus® nopal toast with the previous dressing and add the vegetables, enjoy.
