2 tablespoons onion, finely chopped
1 tablespoon garlic, finely chopped
2 cups button mushrooms, fileted
1 eggplant, diced
1/2 cups corn kernels
1 cup zucchini, diced
1 tablespoon epazote, finely chopped
280 grams Libanius® chipotle and coriander hummus
2 tablespoons chipotle chile
1 package Señor Cactus® nopal tostada shell with chia
1 teaspoon onion powder
salt and pepper

In a skillet over medium heat, heat the oil and add the onion, garlic, mushrooms, eggplant, corn kernels, zucchini, and let cook for 3 minutes.
Add the epazote and cook for 3 more minutes.
Spread a Señor Cactus® nopal toast with the previous dressing and add the vegetables, enjoy.
