Zucchini Flower and Shredded Beef Tamales

If you love tamales, try these zucchini flower and shredded beef fillings. The masa for these tamales does not contain lard, so it’s a healthier version of enjoying these favorite treats. Additionally, the flavor of Knorr® Juicy Rib will give the perfect touch to this tamal.

  • 1 tablespoon canola oil, for the filling
  • 1/2 cups onion, finely chopped, for the filling
  • 1 cup tomatillo, in medium cubes, for the filling
  • 3 cups beef, shredded, for the filling
  • 3 cups zucchini blossoms, clean and without pistil, for the filling
  • 1/2 cups yellow corn kernels, for the filling
  • 1/4 cups cilantro, finely chopped, for the filling
  • 2 cups water, for the masa
  • 1 cube Knorr® Juicy Rib, Rib Broth
  • 4 cups corn masa flour, for the masa
  • 1 tablespoon baking powder, for the masa
  • 1/4 cups canola oil, for the masa
  • banana leaf, roasted
  • green salsa, cooked, for serving
  • panela cheese, in cubes, for decoration

  • For the filling, in a pan with hot oil, sauté the onion until it becomes transparent. Add the tomatillos and cook until they soften. Add the shredded beef, zucchini flower, corn kernels, and cilantro. Mix all the ingredients and cook for 5 minutes. Set aside and let cool.
  • To prepare the masa, dissolve the Knorr® Juicy Rib cube in a small pot with boiling water.
  • In a large bowl, and using a hand mixer, mix the corn flour for tamales with the baking powder and canola oil, integrating them well. Then gradually pour in the water with Knorr® Juicy Rib while stirring until you obtain a workable masa. Set aside.
  • On the center of a square and roasted banana leaf, place a bit of masa and, using a spoon, spread it over the leaf to simulate the shape of a square. Add filling in the center of the masa and cover with a little more masa. Close the banana leaf by wrapping it with the excess from the sides. Repeat until you finish the masa.
  • Arrange the tamales in the steamer vertically, cover with more banana leaves, lid, and cook for 40 minutes on low heat. Remember to always check that the steamer doesn't run out of water. The tamales will be ready when, upon opening, the cooked masa separates from the banana leaf.
  • Once the time has passed, serve with cooked green salsa to taste and cubed panela cheese. Done!
