Zucchini Sandwich with Ham and Cheese

This zucchini sandwich filled with ham and cheese will become a family favorite, as it is a fun and tasty way to eat vegetables.

  • 3 zucchinis, cut into 5 mm wide slices

  • 2 cups Manchego cheese, lightly sliced
  • 2 cups turkey deli ham, sliced

  • 1/2 cups mayonnaise, reduced fat for the dressing
  • 1/2 cups ketchup, reduced sugar for the dressing
  • 1/2 cups sour cream, reduced fat for the dressing

  • Heat water in a pot over medium heat until it boils, then cook the zucchini slices in it for 4 minutes and remove with the help of a strainer. Stop the cooking in a bowl with ice and water. Set aside.
  • For the sandwich: place a slice of zucchini on a tray lined with parchment paper, then add a layer of cheese, a layer of ham, and close with another slice of zucchini. Repeat this process until all the zucchini is used. Bake the sandwich at 180 °C for 10 minutes or until the cheese is golden.
  • For the dressing: add mayonnaise, ketchup, and cream to a bowl, then mix with a spoon or a whisk. Set aside.
  • Serve the zucchini sandwich with ham and cheese on a flat plate and accompany with the dressing.
