Ingredients: 3 zucchinis, cut into 5 mm wide slices; water; water, to stop the cooking; ice cubes, to stop the cooking; 2 cups Manchego cheese, lightly sliced; 2 cups turkey deli ham, sliced; pinches salt; pepper; 1/2 cups mayonnaise, reduced fat for the dressing; 1/2 cups ketchup, reduced sugar for the dressing; 1/2 cups sour cream, reduced fat for the dressing

Heat water in a pot over medium heat until it boils, then cook the zucchini slices in it for 4 minutes and remove with the help of a strainer. Stop the cooking in a bowl with ice and water. Set aside. For the sandwich: place a slice of zucchini on a tray lined with parchment paper, then add a layer of cheese, a layer of ham, and close with another slice of zucchini. Repeat this process until all the zucchini is used. Bake the sandwich at 180 °C for 10 minutes or until the cheese is golden.
