Classic Turkey Mole

A delicious and elaborate sauce, mole is a staple dish of Mexican cuisine.   • 2 turkey legs
  • 2 ancho chiles
  • 3 mulato chiles
  • 1 pasilla chile
  • 15 grams raisins
  • 15 grams almonds, peeled
  • 15 grams pecans
  • 1 prunes
  • 10 grams sesame seeds
  • 1 cinnamon
  • 1 clove
  • 1 allspice berry
  • 1 clove garlic
  • 2 tomatoes
  • 1/4 onions
  • 1/2 tortillas
  • 1/2 bolillo rolls
  • 60 grams lard
  • 1/4 piloncillos
  • 1/2 Mexican chocolate tablets
  • 30 grams salt
  • 1 herb bundle
  • 2 liters water

  • Trim and seed chiles. Char, fry, and soak them in hot water to soften them. Set aside.
  • Roast tomatoes, onion, garlic, sesame seeds, pecans, almonds, cinnamon, clove, allspice, prune, and raisins. Set aside in a bowl.
  • Fry tortillas and bolillo roll.
  • Transfer ingredients to a blender. Add water. Blend until smooth.
  • In a saucepan, heat pork lard. Fry chiles blend for 5 minutes. Add tomato and spices mixture.
  • Stir constantly. After 30 minutes, add piloncillo and chocolate.
  • Place turkey legs in water with herb bundle and onion. Bring to a boil and cook.
  • If needed, add water from cooking the turkey to rehydrate and give consistency to the mole.
