Broccoli and Carrot Croquettes

Croquettes will always be one of everyone's favorite dishes, prepare these broccoli and carrot-based croquettes with Parmesan cheese breaded with corn flakes that will make them more crisp and delicious. You will love it.

  • 2 cups broccoli, bleached and cut into very small pieces
  • 1 cup carrot, finely grated
  • 1 cup potato, cooked and mashed
  • 1/4 cups Parmesan cheese, finely grated
  • 1 egg
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup wheat flour
  • 2 eggs, smoothie, for breading
  • 1 cup corn flakes, ground, for breading
  • 1/2 cups canola oil
  • lime, To accompany

  • In a bowl mix the broccoli with the carrot, the potato, the Parmesan cheese, the egg, the salt and pepper.
  • Form the croquettes with your hands and bread them through flour, egg and corn flakes.
  • Heat the oil in a frying pan over medium heat, fry the croquettes until golden and remove the excess fat.
  • Serve with salad and accompany with lemon if desired. Enjoy.
