Bacon-Wrapped Chicken Cordon Bleu

Wrapped in crispy and crunchy bacon and stuffed with turkey ham and asadero cheese, this chicken cordon bleu is an irresistible dish that will take your family dinner to another level.   • 1 tablespoon vegetable oil, for the sauce
  • 1 onion, cut into cubes, for the sauce
  • 3 garlic, for the sauce
  • 6 tomatoes, cut in quarters, for the sauce
  • 1 tablespoon oregano, for the sauce
  • 1 tablespoon cumin, for the sauce
  • 1 tablespoon pepper, for the sauce
  • 6 guajillo chiles, trimmed and seeded, for the sauce
  • 1 cup chicken broth, for the sauce
  • 20 slices bacon
  • 4 chicken cutlets
  • 8 slices deli ham, turkey breast
  • 200 grams asadero cheese
  • salt

  • parsley, for garnish

  • Preheat oven to 356 °F.
  • For the sauce: In a deep skillet, heat oil over medium heat. Cook onion and garlic until translucent. Add tomato, cumin, pepper, oregano, and guajillo chile and cook until ingredients begin to fall apart.
  • Pour in chicken broth. Bring to a simmer and cook until reduced by half. Remove and cool slightly. Transfer to a blender and blend until smooth. Strain if needed.
  • On a chopping board with aluminum foil, arrange bacon. Place a chicken cutlet on top. Season with salt and pepper. Cover with ham and cheese. Roll tightly with aluminum foil for the perfect roll. Repeat with all the chicken cutlets.
  • Place rolls in a baking dish and bake for 15 minutes. Remove aluminum foil and bake until bacon browns for about 10 more minutes. Serve bacon-wrapped chicken cordon bleu with guajillo sauce and garnish with parsley.
