This recipe for cod carnitas is a great option to prepare delicious tacos for Lent. These carnitas are prepared with fish and are topped with cilantro, onion, and spicy salsa, just like traditional carnitas tacos.
Soak Langa® flaked cod in a pot with cold water. Let rest for 2 to 3 days until desalted. Change water every 12 hours. Rinse and drain.
In a baking dish, place desalted cod. Add evaporated milk, orange juice, clove, bay leaf, onion, and garlic. Marinate for 30 minutes, drain, and set aside.
In a skillet over medium heat, heat olive oil and fry cod until golden brown.
Heat some tortillas and serve cod carnitas with onion, cilantro, lime juice, and red salsa.
