Cod Carnitas

This recipe for cod carnitas is a great option to prepare delicious tacos for Lent. These carnitas are prepared with fish and are topped with cilantro, onion, and spicy salsa, just like traditional carnitas tacos.

  • 3 liters water, for desalting
  • 1 kilo Langa® flaked cod
  • 1 cup evaporated milk
  • 1/2 cups orange juice, for marinating the cod
  • 1 orange, cut into quarters
  • 2 cloves
  • 2 bay leaves
  • 1/2 onions, cut into quarters
  • 2 tablespoons garlic, finely chopped
  • 1/4 cups olive oil, for frying
  • corn tortillas, for serving
  • fresh cilantro, chopped, for garnish
  • onion, chopped, for garnish
  • lime, for serving
  • red salsa, for serving

  • Soak Langa® flaked cod in a pot with cold water. Let rest for 2 to 3 days until desalted. Change water every 12 hours. Rinse and drain.
  • In a baking dish, place desalted cod. Add evaporated milk, orange juice, clove, bay leaf, onion, and garlic. Marinate for 30 minutes, drain, and set aside.
  • In a skillet over medium heat, heat olive oil and fry cod until golden brown.
  • Heat some tortillas and serve cod carnitas with onion, cilantro, lime juice, and red salsa.
