Ingredients

6 servings
  • 3 liters of Water to desalinate
  • 1 kilo of Langa® Crumbled cod
  • 1 Cup of evaporated milk
  • 1/2 Cup of orange juice to marinate
  • 1 piece of orange cut in quarters
  • 2 pieces of clove
  • 2 pieces of laurel
  • 1/2 piece of onion cut in quarters
  • 2 spoonfuls of garlic finely chopped
  • 1/4 of Cup of olive oil to fry
  • enough of Corn tortillas at your service
  • enough of coriander chopped, to serve
  • enough of onion chopped, to serve
  • enough of green lemon To accompany
  • enough of red sauce To accompany

    Preparation

    Soak the crumbled Langa® cod in a pot with cold water, let stand 2 to 3 days until it is desalted. Change the water every 12 hours. Rinse and drain.
    In a oven proof dish, place the desalted cod, add the evaporated milk, the orange juice, the orange, the clove, the bay leaves, the onion and the garlic. Marinate for 30 minutes, drain and reserve.
    In a pan over medium heat, heat the olive oil, fry the cod until golden brown.
    Heat some tortillas and serve the cod with onion, cilantro, lemon and red sauce.

    PRESENTATION

    On a plate, accompanied by onion, cilantro and salsa.

    TIPS

    The milk helps to soften the fish, as well as reduce the intense flavor.
