Easy Stuffed Pumpkins

Rich pumpkins stuffed with vegetables are a very healthy and delicious recipe. They are perfect for Monday without meat and they are also quick and easy to prepare.

  • 2 zucchini
  • 1 bell pepper
  • 1/2 onions
  • 1 leek
  • 4 tablespoons tomato sauce
  • cheese, grated

  • Cut the zucchini along and cook it in salted water for about 7 minutes
  • In a pan, prepare the vegetable, pepper, onion, leek, and tomato sauce.
  • When the courgettes have been cooked, drain them and remove the center. Add the zucchini that you removed to the sofrito.
  • When the sofrito is ready, fill the zucchini, add grated cheese on top and gratin a few minutes.
