Tuna Croquettes Breaded with Granola

Prepare these delicious tuna croquettes breaded with granola. They are very nutritious and have a delicious flavor, as well as a crunchy granola crust. They are perfect for day to day, they do not take much time to prepare and your family will love them.

  • 2 1/2 cups Kellogg’S® granola ancestral grains; amaranth, flaxseed and blueberry
  • 2 potatoes, washed
  • 1 1/2 cups canned tuna in water, Drained
  • 1/4 cups onion
  • 2 tablespoons garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons parsley, washed and disinfected
  • 1/4 cups breadcrumbs
  • 2 eggs
  • 1 cup flour
  • 1 cup vegetable oil

  • Peel the potatoes and cut them into medium cubes. Cook the potatoes in boiling salted water until they are soft. Drain the potatoes and crush them with a fork. You can use the processor for this step.
  • Finely chop the onion, garlic, parsley and add them to the potato. Add the drained tuna, salt, pepper, bread crumbs and 1 egg. Integrate everything until you have a homogeneous mixture.
  • Form balls and pass through flour. Beat the remaining egg and cover the balls, finish with the Granola Kellogg's® Ancestral Grains; Amaranth, flaxseed and cranberry.
  • In a pan, heat the vegetable oil and fry the balls until they are even brown. Place the balls on absorbent paper towel to remove excess fat.
