Glazed Meatloaf

  • 300 grams ground beef
  • 300 grams ground pork
  • 1 cup Spanish chorizo, fried
  • 1 tablespoon McCormick® mustard
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ketchup
  • 1 egg
  • 1/2 cups breadcrumbs
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons parsley, finely chopped

  • 20 slices bacon
  • 1 cup McCormick® chipotle chili raspberry jam
  • 1 cup red wine, for the frosting
  • 1/2 cups beef broth, for the frosting
  • 2 cups new potatoes, for the frosting
  • 1 cup carrot, for the frosting
  • 1 cup peas, for the frosting
  • rosemary, for the frosting

  • In a bowl, mix the ground beef with the ground pork, add the chorizo, the McCormick® mustard, the onion powder, the garlic powder, the ketchup, the egg, the ground bread, the coriander, the parsley, season with salt and pepper, and mix until integrated. Reservation.
  • On a board, spread the bacon slices slightly on top to form a base, place the previous preparation on the bacon and roll covering the meat with the bacon until it forms a roll. Wrap the roll in cling film and press to compact. Freeze for 1 hour.
  • In a skillet over medium heat, add a little oil and seal the meat roll for 5 minutes on each side; then add the McCormick® Raspberry Jam with chipotle chili, the red wine, the beef broth, the rosemary, the chambray potatoes, season with salt and pepper, cover and cook over low heat for 20 minutes.
  • Once the time has elapsed, add the carrots and cook for 10 more minutes, finally, add the peas and cook for 5 minutes. Constantly bathe the meatloaf in the sauce throughout cooking.
  • Cut the meatloaf, serve with the glaze and vegetables and serve with a spaghetti carbonara. Enjoy with a clericot.
