Low Carb Chicken Tacos

Try these delicious low carb chicken tacos prepared with zucchini omelette instead of tortillas.   • 1/2 cups zucchini, cut into round slices.
  • 1 cup almond flour
  • 2 tablespoons cornstarch
  • 4 eggs
  • 1 1/2 cups milk
  • salt

  • 1 cup onion, cut into cubes
  • 2 cups chicken, cut into cubes
  • 1/2 cups green bell pepper, cut into cubes
  • 1/2 cups red bell pepper, cut into cubes
  • 1/2 cups yellow bell pepper, cut into cubes
  • 1 cup Manchego cheese, shredded
  • cilantro, for garnish
  • lime, for serving
  • green salsa, for serving

Low
  • Combine zucchini, almond flour, cornstarch, egg, milk, and salt in a blender and blend until smooth.
  • In a non-stick frying skillet, add Nutrioli® cooking spray and form tortillas with a ladle. Cook 3 minutes on each side. Set aside.
  • In a frying skillet over medium heat, add Nutrioli® cooking spray, onion, chicken, salt, and pepper. Cook for 10 minutes.
  • Add chiles and cook for 5 minutes. Add cheese and cook until melted.
  • Form the tacos. Garnish with cilantro and serve with lime and green salsa.
