Paella Mixta

  • 1 cup Spanish chorizo, cut into small-sized cubes
  • olive oil
  • 1 cup pork chump, cut into small-sized cubes
  • 1 cup chicken breast, cut into small-sized cubes
  • 2 cups precooked rice
  • 3 cups shrimp broth
  • 1 cup white wine
  • fresh rosemary
  • 1 gram saffron
  • 1 cup green beans
  • 1 cup bell pepper, mix of colors, cut into thin strips 
  • 1 cup peas
  • 1 cup shrimp
  • 1 cup clams
  • lemon, for garnish 
  • fresh rosemary, for garnish

  • On a paella pan, heat a bit of olive oil over medium heat and fry Spanish chorizo. Cook until golden brown. Add pork chump, chicken breast, and precooked rice. Cook for 5 minutes. Add green beans, shrimp broth, white wine, fresh rosemary, and saffron. Cook for 30 minutes or until rice is cooked through.
  • Add bell peppers, peas, shrimp, and clams. Cook for 10 more minutes.
  • Serve paella mixta on a plate garnished with lemon wedges and fresh rosemary.
