If you like ceviches this one definitely beats everyone. A Peruvian ceviche with octopus, shrimp and fish cooked with a rich lemon and chile marinade that makes it very special and colorful.

1 cup octopus, cooked, in squares
1 cup shrimp, boy, clean and without shell
1 cup fish steak, of saw cut into cubes
1/2 red onions, finely chopped
3 guajillo chiles, finely chopped
1 cup corn kernels, Cooked
1 cup lime juice
1/2 cups olive oil
1 teaspoon salt
1 teaspoon pepper
1 sweet potato, cooked and diced
1 tablespoon fresh cilantro, finely chopped
1 lime, cut into slices, to decorate

In a large bowl, mix the octopus, shrimp, fish fillet, purple onion, guajillo chili and corn.
Add lemon juice, olive oil, salt and pepper and mix very well.
Cover and marinate in refrigerator for 45 minutes.
Add the sweet potato and cilantro.
Serve and decorate with slices of lemon.
