Vegetarian Burger with Cauliflower and Broccoli Bits

Try this delicious burger made with bits of cauliflower and broccoli Eva® with a creamy cilantro dressing, slices of Manchego cheese, strips of purple cabbage seasoned with lemon and delicious slices of avocado. You can not let it pass.

  • 2 potatoes, cooked and pureed
  • 1 1/2 cups Eva® broccoli bits
  • 1 1/2 cups Eva® cauliflower bits
  • 1 egg
  • 1/2 cups Parmesan cheese, grated
  • 1/2 cups breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1/4 teaspoons garlic powder
  • 1/4 teaspoons onion powder
  • 1 tablespoon Dijon mustard
  • 2 tablespoons vegetable oil
  • 1/2 cups Greek yogurt, for the dressing
  • 1 cup fresh cilantro, for the dressing
  • 1 tablespoon lime juice, for the dressing
  • 1/2 avocados, for the dressing
  • 1 clove garlic, for the dressing
  • salt and pepper, for the dressing
  • 1 cup red cabbage, in strips
  • 1/4 cups lemon juice
  • 1 teaspoon oregano
  • 6 burger buns
  • 1 red beefsteak tomato, in slices
  • 6 slices Manchego cheese
  • 1 avocado, in slices

  • In a bowl, mix the mashed potatoes with the broccoli and cauliflower Eva® bits, the egg, the cheese, the ground bread, the salt, the pepper, the garlic powder, the onion powder and the mustard.
  • Form the hamburgers with the help of your hands, compacting slightly.
  • Heat a pan over medium heat with the oil and fry the burgers on both sides, until the vegetables are cooked and golden brown. Reservation.
  • For coriander dressing, in a food processor, process the yogurt with cilantro, lemon, avocado, garlic, salt and pepper until you get a smooth mixture. Reservation.
  • In a bowl, mix the cabbage with the yellow lemon juice and the oregano. Season with salt and pepper.
  • Arrange the burgers by placing a little cilantro dressing on the top of the buns, followed by the cauliflower and broccoli burger, a slice of Manchego cheese, tomato, avocado and top with a little cabbage. Enjoy
