  • 1 bag Luigi® Rigatoni, for cooking the pasta
  • salt, for cooking the pasta
  • water
  • 6 Roma tomatoes
  • water with ice
  • 1/3 cups olive oil
  • 2 yellow onion, finely chopped
  • 1/2 teaspoons chile flakes
  • 6 cloves garlic, finely chopped
  • salt
  • 2 tablespoons tomato paste
  • basil
  • black pepper
  • Parmesan cheese, for accompaniment

  • To cook the pasta: heat the water until it boils, add the salt, and wait for it to return to a boil. Add Rigatoni De Luigi® and cook for 8 minutes. Drain and set aside.
  • Cook the tomatoes in a pot of boiling water for 2 minutes and transfer to a bowl of ice water to cool. Remove the skin.
  • Heat the olive oil in a pan over medium heat and sauté the onion for 5 minutes or until soft. Then add the garlic, chili flakes, and poached tomatoes, cover and cook over low heat for 10 minutes.
  • Add the tomato paste and cook for 5 minutes over low heat. Season the sauce and add the pasta and basil.
