Ingredients: water, for cooking the pasta; 1 bag Luigi® Rigatoni, for cooking the pasta; salt, for cooking the pasta; water; 6 Roma tomatoes; water with ice; 1/3 cups olive oil; 2 yellow onion, finely chopped; 1/2 teaspoons chile flakes; 6 cloves garlic, finely chopped; salt; 2 tablespoons tomato paste; basil; black pepper; Parmesan cheese, for accompaniment

To cook the pasta: heat the water until it boils, add the salt, and wait for it to return to a boil. Add Rigatoni De Luigi® and cook for 8 minutes. Drain and set aside. Cook the tomatoes in a pot of boiling water for 2 minutes and transfer to a bowl of ice water to cool. Remove the skin.
