Baked Pasta in Corn Sauce

This baked pasta recipe is ideal for family events. With its creamy corn and cheese sauce, it has a spectacular flavor, plus it is very easy to make in a baking dish. It is important not to cook the pasta completely in the water, as it will undergo a second cooking in the oven. You can omit the serrano chili from the recipe.

  • 5 liters water, (1 liter of water for every 100 grams of pasta)

  • 1 bag La Moderna® rotini pasta, 500 grams
  • 1 cup corn kernels, yellow, for the sauce
  • 1 cup corn kernels, white wine, for the sauce
  • 1 clove garlic, for the sauce
  • 1/8 onions, for the sauce
  • 2 serrano chiles, deveined and seedless, for the sauce
  • 2 cups evaporated milk, for the sauce
  • 1 cup sour cream, for the sauce
  • 1 cup goat cheese, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 2 tablespoons butter, for the sauce
  • 1 cup Manchego cheese, grated
  • 1/2 cups corn kernels, yellow
  • 2 tablespoons chives, finely chopped
  • white wine, for garnish

  • Preheat the oven to 200 °C.
  • Heat water in a deep pot over high heat until it reaches a boil. Add the salt, and when it returns to a boil, cook the Rotini La Moderna® pasta for about 5 to 7 minutes, or half the cooking time according to the package instructions. Remove, drain, and set aside.
  • For the sauce, blend the corn kernels with the garlic, onion, serrano chili, evaporated milk, sour cream, goat cheese, salt, and pepper. Strain the sauce.
  • In a medium pot, melt the butter and pour in the sauce, let it come to a boil and cook for 10 minutes or until it thickens. Remove and cool.
  • Place the precooked pasta in an oven-safe dish and pour the sauce over it, sprinkle the manchego cheese, yellow corn kernels, and green onion on top.
  • Bake the pasta for 5 to 7 minutes, or until soft and the cheese has melted. Serve immediately.
