Black Pasta with Huitlacoche

  • 3 tablespoons olive oil
  • 150 grams huitlacoche, canned tuna can be used
  • 3 cloves garlic
  • 1/2 onions, small chopped
  • 4 tomatoes, small chopped
  • 250 grams pasta
  • 1 can tuna
  • 1 ear corn, cooked
  • pepper, to taste
  • chives, for garnish

  • Add the oil to a pan, fry the chopped garlic and onion until golden. Make sure everything is finely chopped.
  • Drain the water from the tuna and add it to the pan. Fry the tuna, stirring the mixture for 5 minutes until it starts to brown.
  • Add the chopped tomatoes, mashing them to obtain a sauce consistency. About 10 minutes. Add salt and pepper to taste.
  • Add the huitlacoche to the mixture along with the corn kernels. Be sure to save some corn kernels for plating.
  • Simultaneously, boil 5 liters of water in a pot. Add olive oil, a couple of onion slices, and salt. Add the pasta once the water is boiling. Cook the pasta until al dente (about 8-12 minutes).
  • Drain the pasta and add the sauce.
  • Plate with corn kernels and green onion.
