Stuffed Cannelloni with Cod in Creamy Garlic Sauce

Try a different way to eat cod with this recipe for stuffed cannelloni, prepared like you’ve never imagined. These creamy cannelloni come with a delicious garlic sauce and will be an irresistible recipe to impress at your Christmas dinner this year. Do not overcook the pasta, as it will lose firmness and be harder to fill the cannelloni. You can also substitute roasted garlic with a tablespoon of garlic powder.

  • 1 kilo Langa® flaked cod
  • 2 tablespoons olive oil
  • 2 tablespoons shallot, finely chopped
  • 1/2 cups green bell pepper, finely chopped
  • 1/2 cups yellow bell pepper, finely chopped
  • 1 teaspoon oregano

  • 12 cannelloni
  • 1 cup sour cream, for the garlic sauce
  • 1/2 cups cream cheese
  • 1 cup evaporated milk
  • 3 cloves garlic, roasted, finely chopped, for the garlic sauce
  • 1 tablespoon Dijon mustard, for the garlic sauce
  • 1 teaspoon thyme, for the garlic sauce

  • fresh oregano, for decoration

  • Soak the shredded Langa® cod in a pot with cold water, let it rest for 2 to 3 days until it desalts. Change the water every 12 hours. Rinse and drain.
  • In a skillet over medium heat, heat the olive oil and sauté the shallot, add the peppers, the cod, and season with oregano. Let cool and set aside.
  • In a pot of boiling water, add the salt and cook the cannelloni for 10 minutes. Drain and set aside.
  • Fill the cannelloni with the cod mixture, place in a baking dish, and set aside.
  • For the sauce, blend the sour cream, cream cheese, evaporated milk, roasted garlic, Dijon mustard, season with salt and pepper, and set aside.
  • In a baking dish, pour the sauce over the cannelloni, add the manchego cheese, and bake at 180 °C for 10 minutes.
  • Garnish with oregano and serve. Accompany with bread.
