Tuna Cannelloni with Mango Sauce

If you are adventurous with flavors and enjoy the exotic, this recipe will surprise you a lot; it is the perfect sweet and sour mix. Step out of the routine use of tuna in savory dishes and venture with this sweet idea of fresh tuna, herbs, caramelized onion, cheese, and mango sauce.

  • 2 cans tuna
  • 150 grams Manchego cheese
  • 3 tablespoons sugar
  • 1 onion, sliced
  • lasagna sheets
  • 1 can chipotle chile
  • 150 milliliters unsweetened natural yoghurt
  • 2 honey mangoes, large
  • spices, bay leaf, oregano, basil, ground pepper, salt, and garlic
  • 1 dash vinegar, sweet

  • The first step is to caramelize the onions, this is optional; you can buy them pre-made, but I highly recommend making them at home so your kitchen has a pleasant sugary aroma while you prepare the rest. Fry all the sliced onion in a little butter or olive oil until they are transparent. NOTE: do not burn them. Then, pour in the tablespoons of sugar and a splash of vinegar, stirring for several minutes until you have a thick consistency. Set aside.
  • Again, fry a little garlic in butter or oil along with all the seasonings. Use as much as you prefer but not too much pepper. Mix with the two cans of tuna along with the water from each. Cook for a maximum of 15 minutes.
  • To make the cannelloni, you can follow the instructions below or buy pre-made cannelloni pasta. In boiling water, add a little garlic, onion, bay leaf, and salt. After a few minutes, when the water has a good aroma from the bay leaf, place 4 lasagna sheets one by one. Make sure the sheets are completely covered by the water. When they are soft and flexible, remove them and place them in a container with a little room temperature water to prevent them from continuing to cook. Preheat the oven to 250°C.
  • Now the cannelloni will be assembled. You can make tubes with the lasagna sheets and place the caramelized onions along with the tuna, or you can keep them flat and layer in this order: a layer of caramelized onions, followed by a generous layer of herb tuna, then carefully roll up. Assemble as many as you like. Place the cannelloni in a greased baking dish and cover with manchego cheese. Since everything is cooked, you only need to bake for a few minutes at 200°C, until the cannelloni are gratinated (the cheese completely melted).
  • While baking, blend the mangoes along with a bit of chipotle (if you like it spicy, use a generous amount), the garlic, onion, salt, and yogurt. Cook this mixture for 5 minutes. You can substitute yogurt for cream if you prefer.
  • Once the cannelloni are baked, serve and cover with the mango sauce.
