Capellini a la capresse

  • 1/2 pounds pasta, capellini, uncooked
  • 1/2 cups Italian dressing, 'house' Tuscan style
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, well chopped
  • 3 cups cherry tomato, halved
  • 1 cup Mozzarella cheese, partially skimmed, low moisture, and crumbled
  • 1/3 cups basil, fresh, finely chopped

  • Cook the pasta as indicated on the package.
  • Heat the dressing, meanwhile, in a large non-stick skillet over medium-high heat.
  • Add the onion and garlic; cook, stirring for 2 min.
  • Add the tomatoes; cook them, stirring occasionally, for 5 min. or until they are completely heated.
  • Drain the pasta.
  • Add the tomato mixture; lightly mix everything together.
  • Sprinkle the pasta with cheese and basil.
