Chipotle Pasta with Broccoli

This chipotle pasta with broccoli is easy to prepare, has a spicy flavor, and a creamy texture. Best of all, it is accompanied by crunchy and juicy broccoli, chicken breast, and Cotija cheese for an extra touch of flavor.

  • 4 tomatoes, cut into quarters, roasted, for the sauce
  • 1/4 onions, roasted, for the sauce
  • 1 clove garlic, roasted, for the sauce
  • 2 chipotle chiles, marinated, for the sauce
  • 2 cups sour cream, for the sauce

  • breaded chicken breast, for garnish, in strips

  • Heat enough water in a pot until it boils, then add salt, wait for it to boil again and add La Moderna® Rotini. Cook for approximately 8 minutes, remove from heat and drain. Set aside.
  • Heat enough water in a pot until it boils, add salt, wait for it to boil again and add the broccoli florets. Cook for approximately 2 minutes, remove, transfer to a bowl with ice water immediately, let sit for 1 minute and drain. Set aside.
  • For the sauce: blend the tomato, onion, garlic, chipotle pepper, and sour cream until fully integrated and obtain a slightly thick and homogeneous sauce.
  • Heat a large skillet or saucepan over medium heat, then add a little olive oil and pour in the sauce. Season with a little salt, pepper, and cook for 3 minutes. Once the sauce thickens slightly, it will be time to incorporate the cooked La Moderna® Rotini pasta, then mix carefully and add the broccoli florets. Cook for 4 more minutes and remove from heat.
  • Serve La Moderna® Rotini pasta along with broccoli, add grated Cotija cheese and accompany with a breaded chicken breast.
