Chipotle rigatoni with almonds

  • 1 package Luigi® Rigatoni
  • 1 cup sour cream
  • 1/2 cups chipotle chile
  • 1 clove garlic
  • 1/4 cups onion
  • 1/2 cups chicken broth
  • salt
  • pepper
  • 1 tablespoon butter, for cooking the sauce
  • 1/2 cups almonds, sliced
  • 1 cup Chihuahua cheese, grated
  • 1/4 cups cheese, grated, for decoration
  • 1/4 cups almonds, toasted, for decoration

  • Bring water to a boil in a pot and add salt and Rigatoni De Luigi®. Cook for 9 minutes or according to package instructions, until al dente. Drain and set aside.
  • Blend the cream, chipotle chili, onion, garlic, chicken broth, salt, and pepper at maximum speed for 3 minutes.
  • Melt the butter in a skillet, pour in the chipotle sauce and almonds, add the Chihuahua cheese and cook for 5 minutes. Add the Rigatoni De Luigi®, mix and cook for 3 more minutes.
  • Serve the chipotle pasta and garnish with cheese and almonds.
