Caprese Pasta with Chicken

I love tomato salad with panela cheese, dressed with olive oil and basil; combining it with pasta makes it a complete dish, and the refreshing flavor that basil gives is delicious. It's also easy to prepare.

  • 200 grams spaghetti pasta, La Moderna®
  • 1 tablespoon salt
  • 150 grams chicken breast, grilled and cut into cubes or shredded
  • 1 cup tomato, in small cubes
  • 1 cup panela cheese, in small cubes
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • 2 tablespoons basil, in julienne
  • 1 cup sour cream
  • 1/2 cups basil, chopped
  • salt
  • 1 teaspoon white pepper
  • corn oil

  • Boil 1 liter of water; when it starts to boil, add the salt, add the pasta, and stir constantly to prevent sticking. Check its consistency; it is usually ready in nine minutes on medium heat... if you have ice, cool it in an ice bath; if not, you can cool it under running water.
  • Mix the balsamic vinegar, olive oil, and basil.
  • Mix the tomato and cheese with the balsamic vinaigrette.
  • Mix the cream, basil, salt, and pepper.
  • Mix the pasta with the cream and basil.
