I love tomato salad with panela cheese, dressed with olive oil and basil; combining it with pasta makes it a complete dish, and the refreshing flavor that basil gives is delicious. It's also easy to prepare.
150 grams chicken breast, grilled and cut into cubes or shredded
1 cup tomato, in small cubes
1 cup panela cheese, in small cubes
1 tablespoon balsamic vinegar
3 tablespoons olive oil
2 tablespoons basil, in julienne
1 cup sour cream
1/2 cups basil, chopped
salt
1 teaspoon white pepper

Boil 1 liter of water; when it starts to boil, add the salt, add the pasta, and stir constantly to prevent sticking. Check its consistency; it is usually ready in nine minutes on medium heat... if you have ice, cool it in an ice bath; if not, you can cool it under running water.
Mix the balsamic vinegar, olive oil, and basil.
Mix the tomato and cheese with the balsamic vinaigrette.
Mix the cream, basil, salt, and pepper.
Mix the pasta with the cream and basil.
