Cilantro Pasta Salad

  • 4.5 liters water, to cook the pasta
  • 4 1/4 teaspoons salt, to cook the pasta
  • 1 package La Moderna® Tricolor Rotini
  • 1 cup cilantro, finely chopped, for the vinaigrette
  • 2 cloves garlic, finely chopped, for the vinaigrette
  • 2 tablespoons lime juice, for the vinaigrette
  • 2 tablespoons honey, for the vinaigrette
  • 1/2 tablespoons cumin, for the vinaigrette
  • 1 1/2 tablespoons apple cider vinegar, for the vinaigrette
  • 1 cup olive oil, for the vinaigrette
  • 1 cup avocado, in medium cubes
  • 1 cup cherry tomato, in halves
  • 3/4 cups yellow corn
  • 1/2 cups panela cheese, in small cubes
  • 1/4 cups red onion, in small cubes
  • 1/4 cups cilantro leaves

  • Cook La Moderna® Tricolor Rotini in a pot of boiling water with salt for 8 minutes. Drain and set aside.
  • In a bowl, combine cilantro, garlic, lime juice, honey, cumin, vinegar, and olive oil. Mix until well combined and set aside.
  • In a bowl, mix tomatoes, corn kernels, panela cheese, red onion, cilantro leaves, avocado, and cooked La Moderna® Tricolor Rotini pasta. Combine.
  • Serve the pasta salad and accompany with the cilantro vinaigrette.
