Greek Cold Pasta

This recipe is prepared in less than 20 minutes and tastes delicious. It includes the flavors of a Greek salad but with pasta.

  • 3 cups bowtie pasta
  • 1 1/2 cups cucumber, peeled and diced
  • 3/4 cups feta cheese, in cubes
  • 1/4 cups red onion, chopped
  • 1/4 cups black olives, slices
  • 1/4 teaspoons pepper, freshly ground
  • 12 tomatoes, halved
  • 1 cup baby arugula
  • 1/4 cups lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoons black pepper
  • 1/8 teaspoons salt

  • Cook the pasta according to the package instructions. When ready, drain and rinse under cold water. Shake off and set aside in a deep bowl.
  • Add the cucumbers, onion, black olives, feta cheese, tomatoes, and arugula to the pasta and stir. Season with 1/4 teaspoon of pepper.
  • To prepare the dressing, mix the lemon juice with the olive oil, oregano, 1/4 teaspoon of pepper, and 1/8 teaspoon of salt. Stir well.
  • Add the dressing to the pasta salad with the vegetables and cheese and stir.
  • Let cool for a few minutes in the refrigerator and serve well chilled.
