Pasta Salad with Chicken and Peach

This fresh salad can be served as a complete meal any time of the year because it contains very simple ingredients that we always have on hand.

  • 400 grams pasta, shell or elbows
  • 1 chicken breast, cooked cut into cubes
  • 1 can peach
  • 1 cup mayonnaise, low in fat
  • 3 tablespoons peach jam
  • 1 onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • ground black peppers

  • The pasta is placed in boiling water with a little salt to cook, and when it is al dente, it is drained and set aside.
  • The chicken breast is boiled and once cooked, it is cut into small cubes.
  • In a large bowl, the pasta is mixed with the chicken and sliced peaches, and everything is gently combined.
  • To prepare the dressing, in a small bowl, using a spatula, the mayonnaise is mixed perfectly with the jam, the chopped green onion, cilantro, and pepper.
  • It is poured into the bowl with the pasta mixture and stirred gently.
  • It is refrigerated and served cold.
