Creamy Chipotle Pasta with Bacon

  • 1 package La Moderna® rigatoni pasta, 200 g
  • 2 cups table cream
  • 1/2 cups evaporated milk
  • 1/4 cups chipotle chile, pickled
  • salt
  • pepper
  • 2 tablespoons butter, in small cubes
  • 1 teaspoon garlic, finely chopped
  • 1 1/2 cups bacon, finely chopped
  • parsley, leaves, for decoration

  • Add salt to a pot with enough boiling water. Add Espiral La Moderna® and cook for 8 minutes. Drain and set aside in a bowl covered with cling film.
  • Blend the half cream, evaporated milk, chipotle chili, salt, and pepper for 2 minutes or until a smooth sauce is obtained.
  • Melt the butter in a deep skillet over medium heat. Add the bacon, fry for 5 minutes, and remove from the skillet. Add the garlic and cook for 1 minute. Pour in the blended sauce and cook for 2 minutes. When slightly thickened, add the cooked pasta and cook for 2 more minutes. Set aside.
  • Serve the creamy chipotle pasta with bacon in a baking dish, sprinkle with crispy bacon, and decorate with parsley.
