Dried Noodles with Chipotle and Cumin

  • 180 grams fideo pasta
  • 5 tomatoes
  • 1 clove garlic
  • 1/2 onions
  • 1 tablespoon ground cumin
  • 5 tablespoons vegetable oil
  • 1 chipotle chile in adobo sauce
  • 100 milliliters sour cream
  • 20 grams Cotija cheese
  • 1 tablespoon parsley, chopped
  • 1 avocado

  • Fry the noodles in vegetable oil until they turn a golden color, being careful not to burn them; while frying, sprinkle with cumin. Once golden, set them aside on paper towels to remove excess oil.
  • To prepare the sauce, sauté the tomato, onion, and garlic clove, all cut into quarters or medium wedges.
  • Add a smoked chipotle to the sauté. When the mixture has taken on a slightly golden color, remove it from the heat and blend.
  • Once the sauce is blended, heat it over medium heat and add the fried noodles. Cook until the sauce reduces.
