Chef Azari presents us with an exquisite recipe for Dried Noodles with Chipotle and Cumin, a preparation based on the traditional Mexican recipe, just with the addition of cumin, which gives it a spectacular flavor.
Fry the noodles in vegetable oil until they turn a golden color, being careful not to burn them; while frying, sprinkle with cumin. Once golden, set them aside on paper towels to remove excess oil.
To prepare the sauce, sauté the tomato, onion, and garlic clove, all cut into quarters or medium wedges.
Add a smoked chipotle to the sauté. When the mixture has taken on a slightly golden color, remove it from the heat and blend.
Once the sauce is blended, heat it over medium heat and add the fried noodles. Cook until the sauce reduces.
