The first thing we need to do to prepare the four cheese pasta is to cook the pasta in a large pot with plenty of water, a little salt, and a few drops of olive oil.
Let the pasta cook for as long as indicated by the manufacturer on the package, usually between 8 to 10 minutes. While the pasta is cooking, we will wash the mushrooms and slice them thinly.
After washing the mushrooms, we will put them in a pan with a little butter to fry them slightly. After a couple of minutes, add the liquid cream for cooking. When the cream begins to bubble, it's time to add the cheeses: roquefort cheese, emmental cheese, and cheddar cheese. Lower the heat and let it melt until a thick sauce is obtained.
When the pasta is cooked, drain it well and place it on the plate where you will serve the four cheese pasta. Add the four cheese and mushroom sauce on top and stir so that all the pasta is coated.
To give the finishing touch to our four cheese pasta dish, sprinkle a little grated parmesan cheese on top, and put it in the oven for 5 to 10 minutes at 210ºC to gratin.
