  • 1 tablespoon sugar, for the crepes

  • 2 cups cow's milk, for the crepes
  • 1 cup tomato sauce, for the sauce
  • 1/4 cups ground chipotle chile, for the sauce
  • 1/2 teaspoons oregano, for the sauce
  • 20 slices deli ham
  • 20 slices Manchego cheese
  • 1 cup canned pineapple, cut into cubes

  • Preheat the oven to 180° C.
  • Blend the flour with the egg, sugar, salt, pepper, melted butter, and milk until you get a homogeneous and semi-liquid mixture.
  • In a non-stick skillet over low heat, pour a ladle of the previous mixture, spread it over the entire surface of the skillet, and cook for 2 to 3 minutes on both sides or until the crepe is cooked.
  • Mix the tomato puree with the chipotle pepper and oregano. Set aside.
  • Place a layer of crepes in a greased baking dish, followed by the tomato sauce, slices of ham, cheese, pineapple, and repeat the process until the dish is full, sprinkling with cheese.
  • Bake for 15 minutes or until the cheese is golden.
  • Decorate with fresh oregano, cut a slice, and serve accompanied by a fresh salad.
