Baked Pasta with Chicken

This delicious pasta with cheese and cilantro is very easy to make and has the Mexican touch you are looking for. Try it; your family will love it.

  • 4 1/2 cups short pasta, medium shells La Moderna
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 can tomatillo, diced
  • 2 cups chicken breast, roasted and cubed
  • 1 can black beans
  • fresh cilantro, chopped

  • Cook the pasta according to the package instructions but without salt.
  • Heat the oil in a large non-stick skillet over medium heat. Add the yellow onions and bell peppers. Cook for 3 to 5 minutes or until tender but crunchy.
  • Incorporate the tomatoes and cook for 3 minutes.
  • Add the chicken, the beans, and half of the cilantro; mix them well. Remove the pan from the heat.
  • Drain the pasta. Add the chicken mixture and stir until combined. Pour the pasta into a baking dish and sprinkle with cheese.
  • Bake for 20 to 25 minutes or until heated through and the cheese melts. Sprinkle with the remaining cilantro.
