  • Place enough salted water in a large pot and bring it to a boil over high heat.
  • Cook the butter, onion, garlic, and mushrooms over medium heat. Sauté for about 10 minutes, depending on how cooked you like the mushrooms.
  • Add the chicken and cook until it turns golden brown.
  • At this point, the water should be boiling. Add the pasta.
  • Turn off the heat and gradually add the milk while stirring with a spoon to mix well.
  • Turn on the stove to low heat, stirring while the sauce thickens. Add the cheese and mix well, then add the cream while whisking until fully incorporated.
  • Add the spinach and cook for 5 minutes until the leaves soften, stirring occasionally.
  • Taste the pasta to ensure it is firm but soft and drain.
  • Serve the chicken and sauce over the pasta.
