Homemade Puff Pastry

  • 4 cups flour
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 cups butter, melted
  • 350 grams butter, 80% fat, in block

  • In a bowl, mix the flour with the salt, sugar, and melted butter. Knead until you obtain a smooth and homogeneous dough. Let it rest for 30 minutes.
  • Place the block of butter between non-stick plastic and, using a rolling pin, flatten it until you have a square 5 mm thick.
  • On a floured surface, roll out the dough and place the butter on one edge, then fold it like a book (single fold). Refrigerate for 20 minutes.
  • Remove the dough from refrigeration and roll it out again, folding the edges to the middle of the dough and then folding it like a book (double fold). Return to refrigeration for another 20 minutes.
  • Repeat the previous step to obtain another double fold and refrigerate covered until use.
