How to make homemade ravioli?

  • 200 grams flour, for the dough
  • 2 eggs, for the dough
  • 1 tablespoon olive oil, for the dough

  • 1 1/2 cups cheese and spinach filling

  • 1/2 cups onion, finely chopped
  • 1 1/2 cups whipping cream
  • 1 tablespoon rosemary, only the leaves

  • For the dough: Mix the flour with the egg, olive oil, and salt. Incorporate everything by hand or with the help of a mixer using the paddle attachment; the texture of the dough should be firm but not dry; if it is too dry, add a little cold water.
  • Let the dough rest and cover it with plastic wrap for at least 15 minutes.
  • Once the resting time has passed, roll out the ravioli dough using a rolling pin or a pasta machine if you have one; remember that the approximate thickness should be 2 mm. Create several strips or portions of rolled-out dough.
  • Place tablespoons of spinach and cheese filling in each one, leaving about 3 cm of space between the tablespoons.
  • Brush the spaces left between each filling and place a sheet of rolled-out dough over the one with the filling, as if you were forming a sandwich; then press down between the spaces and cut squares using a pizza cutter, or you can also use a wavy design cutter. Press the edges with your fingers to create a decoration on the edges of the ravioli.
  • Keep the homemade ravioli refrigerated.
  • Cook the ravioli in boiling salted water for approximately 5 minutes, remove, let cool slightly and set aside.
  • Heat a Vasconia® Vita Pan, add olive oil and butter, then fry the ravioli for 3 minutes on each side until golden and remove.
  • In the same Vasconia® Vita Pan, add more butter if necessary, sauté the garlic and onion for 2 minutes, then add the whipping cream, rosemary, a little salt and pepper. Heat for another 5 minutes until the sauce reduces slightly, and then add the fried ravioli; cook for 2 more minutes to integrate all the flavors.
  • Serve the homemade ravioli with the sauce and accompany with slices of Parmesan cheese.
