Shrimp and Spinach Lasagna

  • 1/4 cups bacon, finely chopped
  • 2 cloves garlic, finely chopped
  • 3 cups shrimp, cleaned and shelled
  • 1 teaspoon butter
  • 2 cups whipping cream
  • 1/2 cups cream cheese
  • 1 cup Parmesan cheese
  • 1 pinch salt
  • 1 pinch pepper

  • Preheat the oven to 200° C.
  • Heat a deep skillet over medium heat and cook the bacon until golden and it releases its fat, add the garlic and shrimp, season, and cook until they change color, then remove from the skillet.
  • In the same pan, melt the butter and add the heavy cream and cream cheese. Cook until the cheese melts, season, and return the shrimp. Once it begins to boil, remove from heat and set aside.
  • Cook the lasagna sheets in boiling water with salt. Drain and set aside.
  • In an oven-safe dish, place the lasagna sheets, a bit of the shrimp, spinach, and Manchego cheese. Repeat until the dish is filled, finishing with lasagna sheets and cheese.
  • Bake in the oven for 10 minutes. Remove from the oven, serve, and enjoy.
