Linguini with Cauliflower Pesto

  • Soak the tomatoes in boiling water for 10 minutes. After the time is up, drain them and chop finely.

  • Place the tomatoes, cheese, capers, almonds, shallots, chili, and parsley in the processor. Blend until it resembles the cauliflower. Season with salt and pepper. Mix with the cauliflower.
  • Add a drizzle of olive oil and vinegar to the mixture. Stir, adding more oil until a paste-like consistency is achieved.
  • Cook the pasta in boiling water with a drizzle of olive oil and salt. Let it cook for 10 minutes. After the time is up, drain the pasta.
  • Mix the pasta with the pesto. Serve.
