Preparation
Hydrate the tomatoes in boiling water for 10 minutes. After time drain them and finely chop them.
Cook the cauliflower in boiling water for 10 minutes. After the time drain and crush it in the processor (crusher). Place the mixture in a bowl.
Place the tomatoes, cheese, capers, almonds, echallote, chili and parsley in the processor (crusher). Grind until it is like cauliflower. Season with salt and pepper. Mix with the cauliflower
Add a splash of olive oil and vinegar to the mixture. Stir, add more oil until a pasty mixture is obtained.
Cook the pasta in boiling water with a drizzle of olive oil and salt. Leave to cook for 10 minutes. Time to drain the pasta.
Mix the pasta with the pesto. To serve.
