Linguini with Clam Sauce

Pasta with fresh clam sauce, garlic, onion, parsley, and basil. It can also be substituted with mussels to change the flavor a bit.

  • 1 1/2 kilos tomato, chopped without skin or seeds
  • 1/2 cups olive oil
  • 1/2 red onions, chopped
  • 3 cloves garlic, chopped pieces
  • 1/4 teaspoons paprika
  • 1 1/2 teaspoons marjoram
  • 1 tablespoon basil
  • 2 tablespoons parsley, chopped piece
  • 1/2 kilos clams, fresh
  • 1/2 kilos linguini pasta

  • Heat the oil and sauté the onion, add the garlic, and let it cook for a few minutes. Add the tomato, paprika, oregano, basil, salt, and pepper, and let it season.
  • Soak the clams in cold water for a while. Drain them, wash them, and put them back in water. Drain them again and add them to the sauce. Discard any that do not open, let it sit for 5 minutes.
  • Meanwhile, cook the linguini in boiling salted water, drain it, and pour the sauce over it. Sprinkle the chopped parsley on top.
