Linguini with Olives and Tomatoes

You have to try this recipe if you like olives and tomatoes; it turns out really delicious. It's not complicated and is quite tasty and filling. It's the perfect meal for when you have guests or visitors at night.

  • 450 grams linguini pasta, or spaghetti
  • 2 tablespoons salt
  • 2 cloves garlic, chopped
  • 2 tablespoons extra virgin olive oil
  • 60 capers, drained
  • 120 grams black olives, pitted, chopped
  • 450 tomatoes, chopped or 1 1/2 cups canned tomatoes
  • 2 tablespoons parsley

  • Cook the linguini in boiling water with 2 tablespoons of salt. Meanwhile, in a saucepan, sauté the garlic in olive oil, allowing it to start browning. Add the capers, olives, tomatoes, and parsley, and simmer for 5 to 7 minutes.
  • Drain the pasta and add it to the saucepan with the sauce, stir and serve immediately while very hot.
