Linguini with Shrimp, Lemon, and Garlic

  • 1/2 cups olive oil
  • 1 tablespoon lemon zest
  • 500 grams linguine pasta
  • 2 cloves garlic, crushed

  • In a deep bowl, mix the olive oil and lemon zest and set aside.
  • Take a small pan and with a tablespoon of olive oil, brown the chopped garlic until very golden, remove from the pan and set aside.
  • In a large pot, bring salted water to a boil. Add the linguini and cook until al dente.
  • Meanwhile, in a large pan, heat the olive oil with lemon over medium heat. Add the crushed garlic and cook for 2 minutes.
  • Cook the shrimp in the oil for 2 minutes or until they are pink.
  • Add the linguini, lemon juice, and season with salt and pepper to taste.
  • Remove from the pan, serve on a large platter. Arrange the shrimp to make them look nice.
