  • First, beat the two eggs and cook them into a very thin omelette, ensuring it does not stick or burn.
  • Next, take the tofu block out of its packaging and drain the liquid it contains. Cut slices about half a centimeter thick and dry each piece with a towel or napkin.
  • In a pan, add a little olive oil, ensuring the temperature rises slowly, and fry the tofu bars until they are golden brown.
  • While the tofu is frying, cook the rice noodles according to the package instructions. Chop the green onions, garlic, and carrots. Combine the white part of the green onions with the garlic and carrots.
  • Mix the lemon juice, sugar, soy sauce, and chili sauce (Sriracha).
  • Remove the tofu from the pan once it is golden and add the vegetables to fry with a little olive oil. After cooking for 3 or 4 minutes, add the liquid sauce you made with the lemon, and once all the vegetables are coated, add the noodles.
  • After the pasta has absorbed the sauce and you stir it with the vegetables, add the omelette you prepared at the beginning, cut into pieces.
  • Add the tofu to the pan to warm everything up and serve.
