For those who like to consume tofu instead of any other food. This pad thai recipe will like them as well as being protein rich and healthy.

  • 2 eggs
  • 1 stick tofu, natural
  • 8 chives, (separates the white and green parts)
  • 2 cloves garlic
  • 2 carrots, cut in juliana (thin canes)
  • 1 package rice pasta, (noodles or noodles)
  • 1/4 cups lemon juice
  • 1 tablespoon brown sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon sauce, Sriracha
  • to taste olive oil
  • to taste salt


First beat the two eggs and cook to have a very thin omelette, taking care not to stick or burn.
Then, remove the tofu bar from its packaging and drain the liquid it contains. Cut slices approximately half a centimeter and dry each piece with the help of a towel or napkin.
In a pan add a little olive oil taking care that the temperature rises little by little and fry the tofu bars to golden brown.
While the tofu is browning, cook the rice noodles as indicated on the package. Cut the scallions, garlic and carrots. Put the white part of the scallions together with the garlic and carrots.
Mix the lemon juice, sugar, soy sauce and chili sauce (Sriracha).
Remove the tofu from the pan as it is golden and put the vegetables to fry with a little olive oil. After cooking for 3 or 4 minutes add the liquid sauce you made with the lemon and since all the vegetables are impregnated, add the pasta.
After the pasta is impregnated with the sauce and stir with the vegetables, add the omelette that you prepared at the start cut into pieces.
Add the tofu to the pan to heat everything and serve.


On a plate make sure you put enough vegetables, pasta and a few pieces of tofu. Above you can decorate with a little cilantro.
