Pasta in Pesto Sauce with Vegetables and Shrimp

  • 500 grams pasta , of your choice
  • 16 shrimp
  • 1 zucchini , diced
  • 1 carrot , grated
  • Parmesan cheese powder
  • parsley , for garnish
  • salt
  • pepper
  • olive oil
  • 2 lime, cut in half
  • 2 cups pesto, (in sauce)

  • Cook the pasta with water and a splash of olive oil for 15 minutes.
  • In a hot skillet with oil, add the shrimp until cooked. Season with salt and pepper.
  • Boil the vegetables, and cut the zucchini into small cubes, grate the carrot.
  • Mix the pesto sauce with the pasta, add the vegetables and the shrimp.
  • Sprinkle powdered parmesan cheese.
  • Serve with a few parsley leaves and four shrimp on each plate. Accompany with 1/2 lime.
