Pasta in Ranch Sauce with Buffalo Chicken

  • 5 liters water, 1 L for every 100g of pasta
  • salt
  • 1 package La Moderna® rotini pasta, 500 g each
  • 1 cup sour cream
  • 2 tablespoons chives, dry
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder
  • 1/2 cups parsley
  • 1/2 tablespoons white vinegar
  • 1/4 cups mayonnaise, low fat
  • salt
  • 2 chicken breasts, cut into strips
  • 2 eggs, beaten
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1/2 cups wheat flour, for breading
  • 1/2 cups corn flakes, ground, for breading
  • vegetable oil, for frying
  • 2 cups buffalo sauce, for wings
  • 1/2 cups butter, melted
  • Parmesan cheese, shredded, for serving
  • parsley, finely chopped, for serving

  • In a pot, bring water to a boil and when it reaches a rolling boil, add the salt. Wait for it to regain temperature and add La Moderna® Rotini pasta, cook according to the package instructions. Drain, cool, and set aside.
  • Place the cream, dried chives, garlic powder, onion powder, parsley, white vinegar, and mayonnaise in the processor. Process until you achieve a semi-thick sauce, season with salt and pepper. In a bowl, mix with the cooked pasta and set aside.
  • In a bowl, lightly beat the eggs with salt and pepper. In another, mix the flour with the corn flakes. Coat the chicken by dipping it in the egg and then in the flour mixture.
  • Fry the breasts in hot oil until cooked and crispy on the outside. Drain on paper towels.
  • In a bowl, mix the buffalo wing sauce with the butter, and coat the chicken with the sauce.
  • Serve La Moderna® Rotini pasta with the chicken, and sprinkle with grated parmesan cheese and chopped parsley. Enjoy.
