A delicious sauce to accompany pasta. This pesto is made with pistachios and olives, unlike the traditional one that uses pine nuts. Delicious!

1/2 cups pistachios, peeled
1 clove garlic
1 cup green olives, pitted
1 cup olive oil
2 tablespoons lime juice
3/4 cups Parmesan cheese
1/4 cups basil, fresh
salt, to taste
pepper, to taste
Preparation

Process pistachios, garlic, and green pepper until a paste is formed.
Add the olives and process again.
Add the basil and continue processing.
With the processor running, gradually add the olive oil.
Finally, add Parmesan cheese and lemon. Season with salt and pepper if needed.
