Olive Pesto

A delicious sauce to accompany pasta. This pesto is made with pistachios and olives, unlike the traditional one that uses pine nuts. Delicious!

  • 1/2 cups pistachios, peeled
  • 1 clove garlic
  • 1 cup green olives, pitted
  • 1 cup olive oil
  • 2 tablespoons lime juice
  • 3/4 cups Parmesan cheese
  • 1/4 cups basil, fresh
  • salt, to taste
  • pepper, to taste

  • Process pistachios, garlic, and green pepper until a paste is formed.
  • Add the olives and process again.
  • Add the basil and continue processing.
  • With the processor running, gradually add the olive oil.
  • Finally, add Parmesan cheese and lemon. Season with salt and pepper if needed.
